Easy zucchini cream recipe
Zucchini cream is one of those simple and delicious recipes that we can prepare for a light dinner, or as a first course of a complete lunch.
It is a vegetarian recipe, even vegan if you remove the butter and cream (below I explain).
As it is very simple to make, and has very few ingredients, it is a dish that anyone can do, even beginners in the kitchen. Also, you can be creative and put extra ingredients to vary, below I give you some examples.

Some people prefer to use chicken broth, which is not a bad idea. Obviously it would not be a vegetarian recipe.
Zucchini, buy them as fresh as possible, with no bruises, no darkened parts.
Easy zucchini cream recipe
Preparation
- Put butter and oil in a pot olive, add the garlic and onion, sauté until transparent.
- Add the sliced courgettes on wheels and sauté over medium heat for about 4/5 minutes, stirring so they do not burn.
- Add the vegetable broth to cover the zucchini, add the peppercorns and salt, cook until softened.
- Add the cilantro, rectify the salt, remove from the heat and let cool.
- Grind in the blender by first placing the zucchini and adding the desired broth until it has the texture of cream.
- Heating to serve and agricultural add a spoon of cream to each plate, decorate with parsley.
- Instead of the cream and the parsley, you can sprinkle with parmesan cheese.

Zucchini cream light (and vegan)
The light version of this recipe is very easy: simply substitute butter for olive oil and, at the moment to serve, do not put cream on it. Everything else is exactly the same.
